An Agritourism or as they also known farm stay, is any land based farm or business that is open to the public. These specialized farms generally offer things to see, things to do, and produce or gifts to buy, and are open to the public at least some parts of the year. Il Salame Piacentino - Piacenza in Emilia Romagna
Il salame D.O.P. ha forma cilindrica. COLORE: rosso vivo con lenticelle di colore bianco rosato. SAPORE: dolce e delicato, aroma fragrante e caratteristico, strettamente condizionato dal periodo di stagionatura.
E' fabbricato con carne magra suina con aggiunta di grasso in percentuale dal 10 al 30%. Per la parte magra i tagli di carne impiegati sono tutte le parti magre del suino con esclusione della pancetta, mentre per la parte grassa viene utilizzato lardo, gola e parti di pancetta prive di grasso molle. Le carni magre e le parti grasse sono ridotte in pezzettini e successivamente passati al tritacarne con stampi a fori superiori ai 10 mm. La pasta così ottenuta viene poi condita a secco con una particolare miscela di sali, aromi naturali e spezie. Segue l'impastamento e l'insaccatura in budello di suino.
